With slow cooked, tender chicken and lots of vegetables, this Asian Sesame Chicken goes a long way, on a little budget!
It seems just like yesterday when I was stuck in the hustle and bustle of life. I was working full time, forty minutes from home. We had one child in school and one who was blessed to be cared for by my mom. Both girls were in activities and our schedule left little time to get home, make a meal and get out of the door. Slow cooker meals became a staple for us, as it allowed for home cooked meals without a lot of active time in the kitchen. But, my rotational slow cooker meals became boring, and we needed something new, and different.
I scoured the internet for slow cooker recipes that we hadn’t already tried, that I could leave for a full 8-10 hours and didn’t require a lot of preparation beforehand. I wish I could remember the blogger who shared this recipe, so I could give her the credit because this recipe quickly became a favorite, set it-and-forget it meal. Although I am now a full-time mom, and blogger, I still make this recipe on days I anticipate a busy day, or when I just need a break from hands-on cooking.
why I love this recipe
There is no beforehand prep needed. This recipe is truly amazing on busy mornings when you have less than 5 minutes! No chopping, dicing, mincing or searing needed. Just add the chicken, pour in your dressing, set the slow cooker and get out the door.
A little goes a long way. With just a pound of chicken, and lots of vegetables, I can stretch this recipe, saving the other chicken breast for another meal. With today’s food prices, we could all use budget friendly meals!

- Boneless, Skinless Chicken Breasts
- Asian Sesame Dressing
- Asian Medley Vegetable Blend
- Minute Instant White Rice
- White Sesame Seeds
let’s get to it: how to make Asian sesame chicken
- Prepare. In a slow cooker, add chicken and dressing.
- Cook. Set slow cooker on low for 8 hours.
- Boil. In a medium pot, boil 2 cups of water. Add 2 cups of rice, stir and cover. Turn off the heat and let it set for 5-10 minutes, until the water has been absorbed and the rice is fluffy.
- Steam and shred. In the last 10 minutes of cook time, steam both bags of Asian Medley Vegetables for the time noted on the bag. While the vegetables are steaming, remove chicken from the slow cooker and pull it apart using two forks then add it back to the slow cooker. Once the vegetables are done steaming, add them to the slow cooker with the shredded chicken and dressing. Give it a good stir until well combined.
- Enjoy. Serve Asian Sesame Chicken over rice and garnish with white sesame seeds.

A: Of course! These days I have more time in the kitchen so, I use Jasmine Rice. You can use any rice you like, just follow the cooking instructions on the package.
