Summer Fruit Salad

A delightful taste of summer that has me so smitten! This Summer Fruit Salad is effortlessly simple to make and perfect as a refreshing side dish, dessert, or snack.

Ingredients

  • 1 small watermelon skinned and cut into 1″ cubes
  • 5 medium – large ripe peaches seeded to cut into 1/2″ cubes
  • 1 pint of blueberries
  • 2 lbs. of strawberries hulled and cut into 1/2″ cubes
  • 2 cups of red seedless grapes sliced in half, length wise
  • 3 tbsp. of sweet mint chopped finely
  • 2 tbsp. raw honey
  • 1 tbsp. freshly squeezed lime juice

Instructions

  • Prepare. Wash, cut and dice your ingredients.
  • Stir. In a large serving bowl, stir together the watermelon, peaches, blueberries, strawberries, grapes and mint.
  • Make the dressing. Add raw honey and freshly squeezed lime juice to a mason jar, put the lid on tightly and shake it up until the dressing is fully combined. If you don't have a mason jar, of course you can whisk these ingredients in a small bowl.
  • Combine. Add Honey Lime Dressing to the fruit and stir until well combined.
  • Store. Cover and refrigerate your fruit salad until ready to serve. When ready to enjoy, give the fruit salad a good stir.

Notes

Chill fruit salad in the refrigerator until you're ready to serve. Before enjoying, give the fruit salad a good stir to mix the flavors. Keep any leftovers tightly covered and store for up to two days.
